2 egg yolks
1/4 c. butter
1/2 c. caster sugar - half of it is for the egg whites
300 g. plain flour
1 2/3 fresh milk or carnation evap. milk
3 t. baking powder
1/4 t. salt
1 t. cream of tartar
Cheddar cheese or any quick melting cheese cut into strips
In a bowl cream butter and sugar using a spatula or wooden spoon until light and creamy.
Add egg yolks and continue beating until smooth. Add sifted flour, salt and baking powder
and mix well.
In a separate bowl beat egg whites and cream of tartar until stiff and gradually add remaining
Fold the beaten egg whites into flour mixture with a wooden spoon or spatula carefully not to
break air bubbles. Pour batter into greased and lined puto or torta moulds about 3/4 full. Put
a few strips of cheese for topping. Steam for 10-15 minutes or when a skewer inserted comes
clean. Cooking time varies on how big and small are your moulds.
