Pan de Monay

Dough 1:
10 g. instant dry yeast
1 c. lukewarm water
400 g. plain flour
175 g. sugar


Dough 2
185 g. plain flour
3 small size eggs
45 ml. full cream milk
¼ t. salt
125 g. grated parmesan cheese or cheddar cheese
75 g. shortening

Make dough #1
Dissolve yeast in lukewarm water and let stand for 10 minutes.
In a large mixing bowl sift flour and sugar and add dissolved yeast. Mix well, knead, cover, and leave to rise until double in size.

Make dough #2 In a separate mixing bowl mix all the ingredients ending with the shortening. Mix well, knead and leave to rise until double in size.
Mix thoroughly dough #1 and #2, scale and mould and leave to rise for 5-10 minutes.
Cut a slit on top of each piece and brush with milk.
Bake at 150 deg. C for 30-40 minutes.
