½ c. cooking oil
½ c sugars
1 c flour
¼ t. baking powder
1 c milk
1 c cream
1 c shredded coconut
1 t vanilla essence
Grease a 27 cm. pie or a quiche dish and set aside.
Beat eggs, sugars and cooking oil together with a wooden spoon.
Add cream, milk and vanilla essence.
Sift in flour and baking powder and mix well until smooth and add desiccated coconut.
Pour batter into the prepared dish and bake at 150 deg C for 40 minutes or until top springs back when lightly touched.
Serve with ice cream and stewed fruits like peaches, pears or a fruit of your choice.
