Special Homemade Pancakes
Every year, my daughters threw a Christmas party. But not just any Christmas party. It was an extravagance to spend the night with our famous RKO Family Special Homemade Pancakes.
The pancake recipe is from my mom’s Fannie Farmer cookbook. Although I don’t remember seeing the recipe, my mother dictated the recipe to me over the phone many years ago. I named these pancakes “special” because they were always served at the Christmas party with a special ingredient.
This is a simple pancake recipe that’s so much better than a mix! Try this and let me know what you think!
RKO Special Homemade Pancakes
Ingredients

2 tablespoons butter, melted

1 egg
-
2 tablespoons of sugar
-
1 teaspoon vanilla extract (this is the “special” ingredient)

1/2-3/4 cup milk

1 cup self-rising flour
directions
Combine milk, butter, vanilla and egg in a mixing bowl. Stir in flour until moistened. The dough will be lumpy.
cooking tip
To give the batter an even more special taste, use a Mickey Mouse waffle iron or animal-shaped moulds. No kidding. Animal-shaped pancakes have always been a hit. The elephant shape has always been a hit, but so hard to keep the trunk attached – see all my molds in the background of the picture! When I bought the Mikey Mouse waffle maker, it really was the game! Every girl wanted the Mickey Mouse waffle on top of the heart-shaped waffle or the regular pancakes. It’s just fun.
service tip
Use the right china and let them sit in front of the TV. I used the Lenox Christmas China, and it was so nice to do that. I decided that if the dishes were broken by the girls, it would be fine. It was great fun using them!

When I make this recipe, I always quadruple the ingredients. Our family ate our special pancakes while watching the Rose Bowl Parade a few weeks ago – I even quadrupled the recipe for the 4 of us. Leftovers freeze beautifully! Just pop them in the toaster and you have breakfast for the week ahead!
Other party activities included a Christmas trivia game, a Christmas swap with a dirty Santa, and a Christmas craft.
