Do You Really Want to Reduce Cooking Time?

Cooking is probably one of the oldest activities or perhaps chores that man has done. I guess the man would have introduced the concept of cooking when he was a hunter and had to eat meat. In my mind, thousands of years ago the caveman would have spent days hunting and trying to get food to survive. His life would have consisted of thinking of ways to feed himself so that he could live. As it evolved, the barter system had to take hold where it could trade and thus have time to do other things. These days, food is widely taken for granted and a tiny part of life. The way it is today, I’m not quite sure if it’s considered an important part of life. I think we’ve taken the concept of outsourcing and bartering a bit too far where we expect someone to almost cook our meal and we finish it or even worse reheat it. We found several other things to do and we lost focus on the most important aspect of life – food. Well, I’m not a food junkie, but the reason I believe food is a very important part of life is because it determines the health of your mind and your body. As they say, health is wealth, and it’s better when it’s unhealthy!

Going back to the old fashioned way of cooking, I remember one of the programs on TV which showed a celebrity chef visiting India and cooking regional dishes in the traditional way. He was cooking meat in a pit where the fire was full. The meat was nicely wrapped in a banana leaf and all the spices loaded onto the meat. The banana leaf is supposed to keep the meat moist. My trip to my hometown reminded me of another traditional cooking method – the clay pot! The sight of ladies cooking in clay pots over a fire outside the house tempted me to join them. Another traditional process involved the fermentation of certain foods. For example, in South Indian cuisine, some pasta could ferment overnight, and the bacteria that actually fermented the food helped digestion. I could go on with this traditional process, but have you noticed what they have in common? Time! They all take a while to cook, but what’s even more striking is that my ancestors who followed traditional cooking methods lived long healthy lives. As our way of life has changed, our method of cooking has changed. There is probably no household without a microwave oven and few households without prepared foods ready to reheat or eat stored in the freezer. The microwave oven is certainly considered a blessing by many busy people juggling work and family. It’s tough and I’m no exception. I struggle to find enough time to cook good food and bought a great microwave. And what do I think of it now? Well, here’s a summary of some claims I’ve seen on some websites:

1. General advice is not to heat baby milk (breast or formula) in the microwave. The obvious reason is that uneven heating could burn baby’s mouth but also the milk is spoiled and some key milk components like vitamins are lost.

2. Scientists named Hertel and Blanc are said to have discovered that eating food cooked in the microwave causes a decrease in hemoglobin levels. They are said to have also discovered that huge amounts of radiolytic compounds are formed in microwaved foods, which lead to deterioration of the blood and the immune system. They would have been prevented from publishing their findings by powerful organizations.

3. Russian scientists are said to have discovered that microwave energy causes changes in the cells of food, be it vegetables, meat or milk, and creates carcinogenic structures. It also impairs the immune system and makes it harder for the body to fight cancer cells.

4. You would think that if it’s so bad for humans, it would have been banned. But regulatory bodies like FDA are said to insist that microwave energy does not leak and harm people around and also one of the popular benefits of using it i.e. less oil and no water, therefore healthier and more nutrients preserved.

After reading these frightening discoveries, I think it is suicidal to continue eating microwaved food. Prevention is better than cure. So, just as I am concluding this article, I have decided to sell my microwave oven. Instead, here are a few things I plan to do…

1. Plan my meals for the whole week so that I have all the ingredients in stock. Whenever possible, prepare ahead such as chopping the vegetables, prepare and refrigerate the ginger garlic paste, prepare the base sauce and refrigerate.

2. Cook large batches over the weekend and freeze a few servings for me and my husband. Thaw it in the fridge in the morning when I need it and heat it on the stove in the evening.

3. Use my convection oven as much as possible and try to reduce fat intake by baking instead of frying.

4. Use traditional methods like cooking in a clay pot which also tends to increase flavor.

While it’s entirely up to you whether you really want to reduce cooking time in a modern way, I would refrain from putting microwave recipes on my food blog.
