Creamy Chicken & Cheese Soup
Ingredients:
3 cups of chicken broth
2 medium potatoes, baked and cubed (leave skin on potato)
1 medium onion, finely chopped
2 tablespoons of butter
3 medium carrots, grated
2 cups chicken, cooked and chopped
¼ cup all-purpose flour
1 cup milk
8 ounces of cream cheese
4 ounces cheddar cheese, grated
Salt and pepper to taste
Instructions:
Saute the onion in the butter until soft over medium heat in a large saucepan. Add chicken broth, carrots and potatoes. Bring to boil; lower the temperature; cover and simmer 30 minutes. Add the chicken, salt and pepper and simmer for about 10 minutes.
In medium bowl, combine flour and milk until smooth; add to vegetable mixture. Bring to boil; cook and stir frequently for about 5 minutes. Lower the temperature; add the cream cheese; cook and stir until melted. Top with grated cheddar cheese just before serving.
Makes 8 servings
Note: This is excellent for ham, steak or turkey. Serve it with warm French bread, cornbread or crackers. I cooked it with frozen green peas instead of carrots and it’s a great change for those of you who love peas. Serve it with a nice big salad and you have a meal.
