LIME FIRST TIME.
Limes hit the market all year round, but summer is the best time for limes.
Abundant supplies mean good values at produce counters. The files are
unlike all fruits because they are both tart and sweet.
Unlike lemons, limes are available seedless, so you can squeeze
limes in drinks. Limes can also replace lemons in most recipes, but
lemons cannot replace the taste of lime when a recipe calls for lime.
Limes also facilitate a salt-free diet. Limes bring out the flavors
like salt, but with barely a trace of sodium Limes add few calories
to food because they enhance flavors and provide vitamin C.
When selecting limes, look for firm fruit with smooth, shiny skin
and dark green color. Keep limes in the fridge and they will stay fresh
for 6 to 8 weeks. Beware of bright light, which ages the lime and turns their skin yellow. These limes will still be juicy, but not as appealing, so use them soon.
To get the most lime juice, roll the fruit between the palm of your hand and a kitchen counter, applying light pressure. Then cut the lime into wedges and squeeze it.
A good idea in hot weather is to squeeze fresh lime juice into ice cube trays to freeze, then store in plastic bags.
These ice cubes can be used in iced tea, cold drinks and fruit juices.
GRANNY’S OLD CHOPPED POTATOES
Chop the remaining potatoes and season with salt. Add 3 tablespoons (45 ml) of milk and a few pieces of bacon, ham or sausage, if desired.
Heat the bacon drippings or any other fat in a frying pan. Add the potatoes and stir, then press lightly. Let the potatoes become rich, golden on the bottom, turn to make the other side.
BAKED STUFFED POTATOES
Select medium-sized potatoes and cook them. Cut a slice lengthwise from the flat side of each potato, scoop out the contents of the shells being careful not to break the shells. Mash potatoes, add hot milk, butter, salt and pepper and beat until light and fluffy.
Stack the potatoes in shells, sprinkle with paprika or chopped parsley. Place in the oven to reheat and cook until the tops of the potatoes are lightly browned. If desired, a well-beaten egg, grated cheese, well-seasoned minced meat, bacon, ham or chicken can be added to the potato mixture before it is piled into the shells.
To make evenly sized meatballs, spread the mixture in an ice cube tray and press the divider to separate the meat into even squares.
Take out the divider and lightly shape the squares into balls.
Add a few drops of vinegar or lemon juice when making blueberry pie.
Pleasantly enhances the flavor.

A guy finds himself in front of st. Peter at the Golden Gate.St. Peter explains that it is
not easy to go to heaven. There are a few criteria before entry.
He asks the guy are you religious? Donated money to the church? Given
money to the poor? Help his neighbor?
The guy answers “no”.
Peter says: “look, work with me, I’m trying to help you, think”.
The guy said, “Well, I came out of a store and found this old lady surrounded by a dozen bikers. They pushed her around and abused her. I was so angry that I threw away my grocery bags, fought through the crowd, and grabbed her purse. After helping her up, I went to the tallest, baddest biker and told him how despicable, cowardly, and mean he was. Then I spat in his face.
“Wow,” said Peter, “That’s very impressive. When did it happen”?
“About five seconds ago” replies the guy.
