So if you want to try milk kefir, you can start making it at home. You can buy kefir grains or milk kefir starters at your nearest health store. If you just want to try drinking kefir, you can buy the kefir starter. The kefir starter lasts about seven to eight cycles. All you need to do is add some milk (preferably raw or pasteurized) and you can start enjoying your kefir drink.

However, if you want to enjoy your milk kefir for as long as you want, you should probably buy a batch of kefir grains. Most people opt for kefir grains because it’s the real thing unlike starter which is considered less healthy because it has already been processed. Also, getting the kefir grains would be more economical as you only need one batch for all your kefir needs.

Here’s how to make milk kefir: First, find a jar where you can let your kefir grains or sourdough ferment. Then add the fresh milk. It is not necessary to boil the milk. Most people prefer raw milk, but you can also try pasteurized milk. In the past, people even used buffalo and camel milk, so you can try all kinds. After that, cover the jar. Preferably, you can cover the pot with a clean cloth. Do not seal the lid as milk kefir needs air to ferment. The microorganisms in the jar need oxygen to reproduce.

The jar should be stored at room temperature and out of direct sunlight. The ideal waiting time for your kefir would be 1-3 days. However, if you want mild tasting kefir, it only takes about half a day. After a whole day, the product would taste a bit pungent, but after two days, it would already taste pungent.

If you go for the starter, you can wait around 18 to 24 hours maximum. Be careful not to overculture your milk kefir as it becomes curdled and more acidic over time. The fermentation process continues so you better be careful not to leave your kefir too long or it won’t taste as good. However, during the summer, kefir ferments faster, so you need to observe it with caution.

When you enjoy consuming your kefir, you can now separate the milk kefir from the kefir grains themselves. Pour the mixture using a strainer. This way you can always save your beans for the next batch. After this process, you can now enjoy your milk kefir drink. For a refreshing drink, you can refrigerate it. And for a hearty snack, you can add fruits or nuts.

With the remaining grains from the last cycle, you can immediately start another cycle of kefir. You can also stir the kefir grains while the cycle is running, but sometimes this messes up the whole probiotic process. So I suggest you avoid disrupting the reproduction of good bacteria by simply letting your kefir grains ferment in the jar. Kefir is a living food, so instead of wasting grain, you’re growing more of it for yourself. This is the advantage of making kefir with grains – you only need one batch and it keeps multiplying. However, if you use a starter, your milk kefir runs out after about eight cycles.

Kefir products are actually more nutritious than yogurt and could also be made into a smoothie that kids will surely love. Moreover, kefir is good for pregnant and lactating women due to its nutritious components which are said to be enhanced by the calcium content of milk. This variation of kefir health drink would benefit everyone, even the elderly with increasing health issues.
